Silver medal for the Azores in the Roellinger European cooking contest
Açoriano Oriental reports that a trainee from the Azores Tourist Training School, finalist of the 3-year Cookery course, Ricardo Carreiro, was classified in 2nd place in the European Roellinger competition, in a test that took place in Athens, Greece, from 20 to 22 of this month of June.
The Olivier Roellinger competition aims to reward young Chefs and future professionals in the restaurant sector who, through their performance, are exemplary in promoting the sustainability of marine species, valuing, for their skill in the kitchen, fish of lower commercial value, in a context where the increased consumption of fish and shellfish puts real pressure on the preservation of ocean products.
This competition, which allows the participation of young professionals up to 25 years old, created by Chef Olivier Roellinger and SeaWeb Europe with the support of UNESCO; all European Union countries as well as Great Britain, Switzerland and Iceland and aims to encourage chefs to use and propose more sustainable marine species.
Ricardo Carreiro was also the only young Chef selected by Portugal, in a competition open to dozens of Portuguese schools, and has now won the silver medal for the 2nd year in a row. The Azores Tourist Training School, which has participated in this competition since its 1st edition, in 2016, has since obtained 2 gold medals and 4 silver medals.
